It’s time for Dahi Vada

Dahi Vada 

Dahi Vada is also popularly called Dahi Bhalla is a traditional snack item across the country enjoyed by people of all ages. It is especially cool for the stomach and provides great nutrition as well probiotic strengths in the form of fresh and good curd.

While the rest of the nation generally makes it sweet, in south India, dahi vada is all about medu vada or Andhra chillu garey (vada with hole) deep fried and then put in the curd.

Though Dahi Vada is prepared after being deep fried in oi, there is an alternative where soaking fried Dahi Vada in water will remove extra oil. 

For those who wish to have Dahi vada fun without being fried, vadas cooked on steam also generate a yummy effect

 

First prepare traditionally Steamed Dahi Vada made out of:

  • Urad dal 
  • Moong dal 
  • Grated Ginger 
  • Salt – to taste
  • A little heeng 
  • For Dahi Vada 
  • Curd – 3 cups
  • Salt – for taste 
  • Red chilli powder: 1 teaspoon
  • Cumin powder – 2 teaspoons 
  • Dhaniya chutney
  • Chopped coriander

Now let us Dahi Vada 

Keep both dals ready by washing and soaking in water for 3-4 hours. Drain water and grind the dals without water. Transfer it into a small vessel or a bowl.

Put some oil to soften the idli stand. Put optimal water in the cooker and place the stand. 

Add salt and ginger to the paste dal and beat the mixture well. You may add some soda to beat the mix. The dahi vada mix is ready with least oil

Now, take a spoon of the mixture and place it in one level over the idli stand. Fine flatten the mixture to get the shape of the Vada. Similarly, put mixture in all the levels. 

Place the stand with Dahi Vadas in the cooker. The vadas have to cook for 10 minutes in the steam. After turning off the cooking process, pluck the stand out of the cooker and allow it to cool off. Now transfer Vadas to a large plate.

Now, the yummiest deal… pour dahi on the vadas, may be a few at a time to ensure dahi soaks the vadas well and softest. Next add plain salt and a pinch of black salt. Add the chutneys you want. Sprinkle chilli powder, Jeera and garnish with Dhaniya
